Pumpkin Seed Protein Muffins

I love these muffins ! Not only are they low in sugar and contain healthy fat, they are also high in protein, low in oxalate and may be helpful in a healthy detox program. I keep them in the fridge and grab one or two when I am crunched for time and need a quick snack. These are great breakfast foods.

Ingredients:

  • 1.5c of coconut flour
  • 1/2 c flaxseed meal
  • 2 servings egg replacer
  • 1/2c dairy free milk (choose from coconut, pea, hemp, rice)
  • 4 tbsp pumpkin seed butter
  • 4 scoops pumpkin seed protein powder
  • 1 tbsp avocado or coconut oil
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2c unsweetened applesauce (opt)
  • 1/4c stevia (opt)

Instructions

  1. Mix all the dry ingredients together
  2. Add in the wet ingredients
  3. Vigorously mix in the egg replacer (follow preparation of egg replacer)
  4. Pour the mixture in paper muffin tins, filling ¾ full
  5. Bake at 350 degrees for 30 minutes
